Mom put on quite the birthday dinner for me-as always. Our family never misses a birthday or holiday. Our motto: celebrate the good times. With the 4 grandkids now in tow, it's much easier to celebrate at home. This year I really challenged her menu planning capabilities with my new wheat, dairy, soy, citrus, and corn free diet. Sorry you missed the meal, aren't you?
On the outdoor dinner table and under the sun was salmon and crab with a beurre blanc sauce, a fantastic nicoise type salad that could feed an army, and a wheat and dairy free cake. Mom had researched cake recipes that fit my new limitations but decided they all looked rather unappetizing. Hard to imagine. So, she left the dessert up to my sister who found a local gluten and vegan free bakery. The carrot cake was actually quite good but I'm looking forward to the day when I can eat the real thing.
